Fortunately, burnt tops and raw centres usually have clear causes. Once those are understood, fixing them becomes much easier. A few thoughtful adjustments can turn temperamental OTG baking into something far more reliable.

Why OTG Cakes Bake Unevenly And What You Can Do About It 

1. The Baking Temperature Is Too High

A high temperature is one of the most common reasons a cake colours quickly on top while remaining uncooked inside. When the oven runs too hot, the outer layer sets before heat has had enough time to travel towards the centre. The result looks promising at first. The surface rises, browns and smells wonderful, yet the middle stays wet.

This becomes especially noticeable in smaller OTGs, where heating rods sit close to the cake. A recipe that suggests 180°C may work beautifully in one oven but feel aggressive in another.

Try reducing the temperature by about 10°C to 20°C and extending the baking time slightly. For example, a cake baked at 180°C may behave better at 160°C or 170°C in a compact OTG.

Avoid repeatedly opening the oven door to check progress. Each peek releases heat and can make the centre take even longer to cook.

5. The Heating Rod Settings Are Wrong

Many OTGs allow separate control of the upper and lower heating rods, and this is where confusion often begins.

For cakes, both rods are usually needed because balanced heat helps the batter bake from multiple directions. Using only the top rod can brown the surface aggressively while leaving the lower portion undercooked. Using only the bottom rod may cause excessive base browning while the top remains pale.

Check the appliance manual because heating modes vary across brands and models.

A common cake-baking setup uses both upper and lower rods without the grill function. If convection is available, the fan may improve circulation, although some delicate cakes may need a slightly reduced temperature when the fan runs.

If a dark tin is the only option available, reduce the oven temperature slightly. A drop of around 10°C can help.

Glass baking dishes behave differently too. They hold heat for longer and may require temperature adjustments.
